When we talk about great coffee, “freshly roasted” is usually one of the first things we celebrate. And for good reason. Coffee begins to lose aroma and flavour over time, so fresher is generally better.
But there is a catch. Coffee can actually be too fresh to brew at its best.
That may sound strange, especially when so much of the coffee world focuses on freshness, but freshly roasted beans need a little time to settle before they reach their sweet spot.
What Happens After Coffee Is Roasted?
During roasting, coffee beans go through a dramatic physical and chemical transformation. Heat causes the beans to expand, sugars and other compounds change, and gases — especially carbon dioxide — build up inside the bean.
Once roasting is complete, those gases begin to escape. This process is called degassing, and it continues for days after the coffee leaves the roaster.
That is why many coffee bags include a one-way valve. The valve allows carbon dioxide to escape from the bag while helping prevent outside air from getting in.
Why Does Degassing Matter?
When coffee is brewed, water needs to make even contact with the grounds so it can dissolve the flavour compounds we want in the cup.
If a coffee is extremely fresh, there may still be a large amount of carbon dioxide trapped inside the beans. When hot water hits the grounds, that gas escapes quickly. Too much gas can interfere with extraction by pushing water away from the coffee particles. The result can be a cup that tastes less balanced than expected. You might notice sharpness, uneven flavours, or simply feel that the coffee is not quite as developed as it should be.
Give that same coffee a few more days to rest and the difference can be surprisingly noticeable.
What Is Coffee Bloom?
You may have already seen degassing in action without realizing it. When hot water is first poured over freshly ground coffee, the grounds often swell, bubble, and rise.
This is called the bloom. The bloom is carbon dioxide rapidly escaping as water reaches the coffee.
In pour-over brewing, it is common to add a small amount of water first and allow the coffee to bloom before continuing the brew. Giving the gas a chance to escape helps the remaining water interact more evenly with the grounds.
A lively bloom is often a good sign that the coffee is relatively fresh, although the amount of bubbling can vary depending on roast level, grind size, and how long the beans have rested.
So How Long Should Coffee Rest?
There is no single number that works for every coffee. Different origins, roast levels, and brewing methods can all behave differently.
As a general rule, many coffees begin opening up nicely several days after roasting. Some lighter coffees may continue improving for a week or longer, while darker roasts often release gas more quickly. Espresso can be especially sensitive to very fresh coffee. Because espresso uses pressure and a short extraction time, excess carbon dioxide can make shots more unpredictable. For that reason, espresso beans are often given a little more rest before being used.
The important point is not to become obsessed with an exact number of days. Think of coffee as having a window, rather than a single perfect moment.
Fresh Does Not Mean “Use Immediately”
One of the biggest misconceptions about specialty coffee is that the best cup must be brewed the same day the beans are roasted.
In reality, freshly roasted coffee often benefits from patience. A few days of rest can allow flavours to become clearer, sweeter, and more balanced.
That does not mean you need to leave your coffee sitting around for weeks. It simply means that “fresh” should not be confused with “immediate.”
What About Dark Roasts?
Roast level also plays a role in degassing.
Darker roasts tend to have a more porous bean structure because they have spent more time developing under heat. As a result, they often release carbon dioxide more quickly. Lighter roasts are generally denser and may hold onto gas longer.
That means a dark roast may be ready to brew sooner than a very light roast, although every coffee will behave a little differently.
How Should You Store Coffee While It Rests?
Good storage matters just as much as resting time.
Coffee’s biggest enemies are oxygen, heat, moisture, and light. Keep your beans in a sealed container or in their original resealable coffee bag, ideally somewhere cool and dry. Avoid storing coffee beside the stove, in direct sunlight, or anywhere that experiences large changes in temperature.
The goal is to let carbon dioxide escape gradually without exposing the coffee to unnecessary oxygen.
Should Coffee Go in the Fridge?
For coffee you plan to use regularly, the refrigerator is usually more trouble than it is worth.
Coffee can absorb moisture and odours, and repeated changes in temperature can create condensation.
For everyday use, a cool cupboard and a well-sealed bag or container are usually the simpler choice.
When Does Coffee Become Too Old?
Degassing is helpful at first, but over time another process begins to dominate: oxidation.
Once coffee has released much of its carbon dioxide, exposure to oxygen slowly begins to dull its aroma and flavour.
That is why freshly roasted coffee has a useful window. Too early, and it may still be releasing too much gas. Too late, and the flavours may begin to fade.
Somewhere in between is the sweet spot.

One of the best ways to understand coffee freshness is to experiment. Brew the same coffee a few days after roasting, then try it again several days later. You may notice changes in sweetness, aroma, acidity, body, or balance.
That is part of what makes coffee so interesting. Coffee is not static. It continues to change after roasting, and learning how those changes affect your cup can make you a better brewer.
So the next time you open a bag of freshly roasted coffee, there is no need to rush. Sometimes the best thing you can give a great coffee is simply a little time.

What is coffee degassing?
Degassing is the natural release of carbon dioxide trapped inside coffee beans during roasting. The process begins immediately after roasting and continues for days or even weeks. The greatest amount of gas is generally released during the first 24–48 hours.
How long should coffee rest after roasting?
There is no universal rule because origin, processing method, roast profile, storage and brewing method all affect degassing. As a practical starting point for whole-bean coffee:
Dark roast: about 2–4 days
Medium roast: about 3–5 days
Light roast: about 5–7 days, sometimes longer
These are guidelines rather than deadlines. Darker roasts generally degas faster because roasting creates a more porous bean structure, while lighter roasts tend to release their gases more slowly.
Does espresso need more resting time?
Usually, yes. Espresso is particularly sensitive to excess carbon dioxide because of its short brewing time and high pressure. A common recommendation is to give espresso coffee at least 7 days of rest, with some coffees tasting better around 7–10 days or more after roasting.
Can I brew coffee before it has finished degassing?
Absolutely. Coffee does not suddenly become “ready” on a particular day. Brewing it earlier is perfectly safe; you may simply find that the extraction is less consistent or the flavours are not yet as balanced.
Try the same coffee again a few days later and see whether you notice a difference.
Why do fresh coffee grounds bubble when I add water?
That bubbling is the coffee bloom. Hot water causes trapped carbon dioxide to escape rapidly from the grounds. A noticeable bloom is particularly common with recently roasted coffee.
Does a bigger bloom mean better coffee?

Does grinding coffee speed up degassing?
